Grilled Eggplant with Mozzarella, Tomatoes, and Basil Recipe


The first thing I wanted to grow in my garden was tomatoes and we have! Our neighbors have also been bringing us tomatoes from their farm. If I knew this would happen, I might not have planted my one tomato plant. Then again, it's nice to be able to grow my own produce.

As a family, we've really bonded over the experience: from digging the ground up, to watering daily with our micro-sprinkler system, to watching our tomatoes grow. With a teenager in tow, that says a lot.

Whether you grow your own tomatoes or buy them, this grilled eggplant with mozzarella, tomatoes and basil recipe is a nice change of pace for your grill. Not only that, it's perfect for Meatless Monday.

Grilled Eggplant with Mozzarella, Tomatoes and Basil Recipe

I've always loved eggplant, but I haven't had much luck with crafting recipes on my own. Actually, I've only tried cooking with eggplant once and it was such a disaster that I was too afraid to try cooking with it again. I was looking for something easy that would help me use up all these tomatoes, but something different from the norm.

We've made good use of our grill since we moved in April, but mostly with meats. It was time to show the veggies some love, though eggplant is technically a fruit. Grilled anything is easy for me. I just have one of the guys fire up the grill and tell them what to do!

Grilled Eggplant with Mozzarella, Tomatoes, and Basil

If you love eggplant, but you haven't been able to master it at home, this grilled recipe is for you. Combined with tomatoes and fresh mozzarella cheese, it's easy to make and it's a great way to get your fruits and veggies in.
  • 1 lb. Eggplant
  • 3 Tbsp. Olive Oil
  • 1/2 lb. Fresh Mozzarella Cheese Ball
  • 3 large Tomatoes, Firm and Almost Ripe
  • 1 bunch Fresh Basil for Garnish
Cooking Directions
  1. Rinse and dry the eggplant.

  2. Trim off ends of eggplant.

  3. Slice eggplant into 1/2 inch thick slices.

  4. Brush each slice with oil and salt, then set aside.

  5. Slice mozzarella using a tomato slicer or mozzarella slicer, then set aside.

  6. Rinse and dry off tomatoes.

  7. Slice with a tomato slicer.

  8. Season with salt and pepper, then set aside.

  9. Rinse and remove stems of basil.

  10. Prepare a medium-high charcoal or gas grill.

  11. Grill eggplant on both sides until golden-brown with grill marks and tender, about 3-4 minutes on each side.

  12. Remove eggplant from grill and season with salt and pepper.

  13. Brush tomatoes lightly with olive oil.

  14. Grill tomatoes for 1-2 minutes on each side, until warmed.

  15. To serve, stack the eggplant, then tomato, then mozzarella with fresh basil leaves in between and on top.

  16. Drizzle with olive oil and balsamic vinegar or a balsamic vinaigrette salad dressing.

  17. Season with salt and pepper to taste, if needed.
